Red Lentil Soup Mix

Note: Makes 4 batches (4 cups per batch)
Ingredients
- 1/2 cup dried minced onion
- 2 Tbsp. dried parsley flakes
- 2 tsp. ground all spice
- 2 tsp. ground cumin
- 2 tsp. ground tumeric
- 1 1/2 tsp. salt
- 1 tsp. garlic powder
- 1 tsp. ground cardamom
- 1 tsp. ground cinnamon
- 1 tsp. pepper
- 1/2 tsp. ground cloves
- 2 pkg. (1 lbs each) dried red lentils
Additional ingredients for each batch
- 1 medium carrot, finely chopped
- 1 celery rib, finely chopped
- 1 Tbsp. olive oil
- 2 cans (14 1/2 oz each) vegetable broth
Instructions
- To make the mix, combine the first 11 ingredients. Plase 1 1/3 cups lentils in each of the four containers. Evenly divide the onion mixture among the jars, placing in small plastic bags if desired. Store up to 6 months.
- To Prepare a batch: rinse lentils and drain. Head carrot and celery until tender. Add the hte lentils onion spice mixture, and broth. Bring to a boil. Simmer for 10-15 minutes.
